Icy Creami ice cream: what causes it and how to fix it

Icy means ice crystals: too much free water and not enough fat, sugar or thickener to hold it. Re-spin with a splash of milk to rescue this pint; add a stabilizer like pudding mix or a spoon of cream cheese to fix the next one.

Rescue this pint

  1. Add 1 tbsp milk or cream to a small hole.
  2. Press Re-spin.
  3. Eat it right away. Icy pints get icier if you refreeze them.

Fix the recipe

  • Stabilizer: 1 tbsp sugar-free instant pudding mix or โ…› tsp xanthan gum per pint.
  • Fat: 1 tbsp cream cheese, ยผ cup cream, or coconut cream.
  • Sugar: even 1โ€“2 tbsp of sugar, honey or allulose lowers the freezing point. Erythritol alone makes pints icy.
  • Less water: thick bases (Greek yogurt, cottage cheese, ultra-filtered milk) freeze creamier than juice or plain water.

Freeze it right

Freeze flat for a full 24 hours with the lid on. A half-frozen pint has a soft center and an icy edge. Don't fill above the max line.

Questions

Is icy the same as crumbly?

No. Crumbly is dry snow that a re-spin fixes. Icy is crunchy crystals in a smooth pint, which a recipe change fixes.

Does a longer freeze make it less icy?

Freeze at least 24 hours. Longer doesn't help much, but less than 24 hours often makes it worse.
